James is a lipid chemist with over 40+ years in the food processing industry including 20 years in R&D developing lipid-based commercial food ingredients and applications. James authored two US Patents for the fractionation of hard fats to yield commercial cocoa butter equivalents (CBE), replacers (CBR) and substitutes (CBS). He is also a Technical Advisory Board member for key industry clients.
